Aukstā zupa

Vienīgais glābiņš šajā karstumā ir aukstā zupa. Vakariņās, brokastīs, pusdienās, un sataisīju tik lielu katlu, ka paliks pāri vēl drusciņ vakariņām.
What is cold soup? The closest explanation I've come up with is this - it's like the Greek dip tsatsiki, only with more of everything.
Cold soup is a traditional Latvian dish for when the heat hits. You make it with kefir, which is a type of processed sour milk, kind of like Greek yoghurt, but more liquid, and more acid-y. The main ingredient after kefir is marinated beetroot (oh, yes, we Latvians know good stuff :) ), cucumber, hard-boiled eggs, dill, and whatever else you'd like to add. I love boiled potatoes in cold soup, and avocado. That's what you see sticking out of the soup in the picture below - cut up boiled potato and avocado.

You eat this soup chilled, and it's the most perfect food for hot weather.

Sastāvdaļas:
4 olas
1 gurķis
2 daiviņas ķiploka
1 burka marinētu biešu (apm. 700 gr)
2 litri kefīra
kāds katliņš novārītu kartupeļu
2 lieli avokado
bunte diļļu
sāls, pipari

Darba secība:
Novāra olas.
Nomizo gurķi, un uz rupjas rīves sarīvē. Liek lielā katlā un uzkaisa pa virsu drusku sāli.
Ar ķiploku spiedi izspiež katlā ķiploku.
Sarīvē bietes, liek katlā.
Uzlej kefīru un apmaisa.
Sagriež kartupeļus un liek katlā.
Nomizo olas, sakapā un liek katlā.
Nomizo un sagriež avokado, liek katlā.
Sakapā bunti diļļu, liek katlā.
Pieliek sāli un piparus pēc garšas. Visu apmaisa.
Ieliek ledusskapī, lai paliek riktīgi auksts, un tad ēd.

  1. I do not like beets but they give your soup such an incredible color! Because I dislike beets so very much I put them in Abner's smoothies often. I know they are VERY good for you and I hope he will like them.

    A bit off topic; I LOVE the flooring (on your patio?)!

    1. Thank you SO much! I've actually been thinking about doing a review of the floor (on the balcony). It's IKEA, and I'm super pleased with it!
